Slaw

This is a great, versatile salad perfect for every occasion - from summer barbecues to picnics. We even serve it on Boxing Day in a big bowl alongside our cold Christmas turkey.

Ingredients

  • ½ a red cabbage
  • 5 carrots
  • 3 red apples
  • Handful of walnut pieces
  • Handful of sultanas
  • 3 tbps Hillfarm mayo
  • Handful of mixed seeds (we like munchy seeds)
Mayo-free dressing (optional)

Mix all the ingredients above in a jam jar and shake well.

Method

  1. Pre soak the sultanas in boiling water for 30 minutes.
  2. Prepare the vegetables – shred the cabbage in thin strips; peel and grate the carrots and remove the core of the apples before chopping into cubes (leaving the skin on).
  3. Mix all the vegetables together and then add the walnuts, sultanas, and mayo (or non-mayo salad dressing) combining thoroughly.
  4. Sprinkle with the mixed seeds.
  5. Keep in the fridge for up to 4 days.
