Breakfast Waffle with Yoghurt & Berries

Invest in a waffle maker and you’ll always be able to whip up an amazing breakfast, brunch or dessert in minutes. These sweet waffles are topped with yoghurt and berries but are great with maple syrup, slices banana or whatever takes your fancy!

Serves Makes 6

Ingredients

  • 3 egg yolks
  • 3 egg whites
  • 3/8L milk
  • 2 tsp baking powder
  • 3 tsp caster sugar
  • 1/2 tsp salt
  • 8 tbs hillfarm rapeseed oil

Method

  1. Separate the eggs and mix the yolks with the milk in a large bowl.
  2. Add the flour, baking powder, sugar and salt and mix well.
  3. Add the oil to the batter and mix.
  4. Whisk the egg whites until firm pecks are formed. Fold into the batter mix and pour into a waffle iron.
  5. Serve with your favourite toppings.

The mixture keeps well for 2-3 days in the fridge. Just mix well before you use.
